These organic cacao truffles are creamy, linger on your tongue and satisfy you with just one! Start with organic, non-gmo cacao powder, add some coconut oil, coconut milk, vanilla, honey and voilla! This fast and easy treat brings pure joy to all who partake and are very low in carbs and sugar. Keep them on hand for that chocolate craving to boost serotonin levels, ground anxious energy and give you a boost of anti-oxidants.
Soften 1/2 cup coconut oil in microwave
Add 1/4 tsp fine sea salt
Add 1/4 cup honey
Add 1 tsp vanilla (or other extract or liquor)
Add 1 cup cacao and stir until smooth. Add 1/4 cup of coconut milk or coconut cream
Mix well. Refrigerate til a soft dough like consistency forms. Roll into ball and roll into confectioner's sugar, cocoa powder, finely chopped nuts or coconut. Serve in mini muffin cups. Enjoy! Happy Holidays!

12 cups vegetable broth made with Better than Bouillon
1 15oz can pettite diced tomatotes
2 cups short grain brown rice par-cooked
1-2 tblsp olive oil
1 tbsp cumin
2 tsp coriander
3 cloves garlic
2 celery stalks
1 pkg mushrooms
couple handfuls of green beans or 2 cups chopped frozen green beans
1/2 can sliced olives
2 cups chopped spinach
Saute the onion and leek in the olive oil. Add the carrots, celery, green beans and parsnips and cook for 5 min. Add the broth. Bring to boil and reduce to medium. Add the rest of the veggies, rice and spices. Cook for another 10 min. Serve with crackers or toasted bread. Enjoy!
