Inspiration Soup with Jakki Gioia 11-30-18 Turkey Rice Soup

Turkey Rice Soup Recipe

Turkey Rice Soup Ingredients:

  • For broth: Turkey carcass, 2-3 carrots, 2-3 celery stalks, ½ onion, 1 parsnip, 6 cups water

  • turkey meat chopped

  • ½ -1 leek

  • 1-2 stalks of celery chopped

  • 2 carrots or ½ bag baby carrots chopped

  • 1-2 parsnips chopped

  • 6 cups broth/stock (turkey) sprig of fresh thyme or 1 tsp dry thyme

  • ¾ cup Royal blend rice


  • Put all stock ingredients into pot and cook for 4 hours or cook in pressure cooker. Remove all ingredients and save carrots, parsnips and broth. Remove meat from turkey bones.

  • Saute leek, carrots and celery in broth

  • Add broth and bring to boil. Turn heat to medium/simmer

  • Add sprig of thyme to pot and salt or any seasonings you desire

  • Add the rice Approx. 5 min later, add the turkey

  • Cook about 10 min

  • Pull out thyme sprigs when they are limp and remove them from pot (can pull the leaves off the sprig with your fingers if desired)

  • Enjoy with toasted bread or crackers
