Italian Wedding Soup:
Ingredients:
1 lb ground beef, turkey or chicken
½ cup seasoned breadcrumbs
1 egg
1 tbsp onion powder
1 tsp garlic powder
1 tbsp Italian seasoning
1-2 tbsp Olive Oil
4 carrots chopped or sliced
2 celery stalks chopped
½ vidalia onion chopped fine
4 cloves garlic minced
1 zucchini sliced
1 cup mushrooms sliced (optional)
8 cups chicken broth or (8 cups of water and 8 tsp Better than Boullion)
1/2 cup uncooked acini di pepe
2-3 cups fresh baby spinach (optional)
Salt and pepper to taste
Preparation Notes not shown in the video:
Preheat the oven to 325
Spray a baking sheet with nonstick spray or line with parchment paper.
Mix together thoroughly the 1st 5 ingredients and roll into balls the size of a dime. Place the balls on the baking sheet.
Bake for 15-20 min. remove from oven and set aside. Can make ahead of time and freeze until ready to make the soup.
Heat the pot over medium flame. Add 1-2 tbsp Olive Oil (or similar oil) to the pot. Once oil is hot, add the carrots, celery and onion and cook until softened (approx. 10 min), add the garlic and zucchini and cook 5 min. Stir well. Add the broth and stir. Let come to a boil and reduce heat to simmer. Add the meatballs, mushrooms and acini di pepe and cook 10 min. Add the spinach. Serve and enjoy!
