Inspiration Soup: Lentil Soup

Lentil Soup

½ bag dried lentils

½ large Vidalia onion minced

½ bag raw baby carrots whole or chopped

6 cups water

1 bay leaf

2 stalks celery chopped small (optional)

2 potatoes chopped small (optional)

½ cup royal blend rice or other rice ( optional)

6 tsp vegetable or beef boullion

1 tsp adobo seasoning, 1 tsp cumin, 1 tsp garlic powder Or Seasoning to taste, for example: garlic salt, coriander, curry, Italian seasoning

Cook:

Rinse dried lentils and sort to make sure there are no pebbles in there

Combine 1st 7 ingredients in pressure cooker and close lid tightly

Allow to shake then turn off. Run under cold water to bring pressure down and open.

Note: if using a regular pot, bring to a boil, cover and simmer for 20 min or until lentil are tender

Then add the boullion, rice and seasoning and cook another 15 min

Remove the bay leaf and enjoy!
