Vegetable Soup

  • 12 cups vegetable broth made with Better than Bouillon

  • 1 15oz can pettite diced tomatotes

  • 2 cups short grain brown rice par-cooked

  • 1-2 tblsp olive oil

  • 1 tbsp cumin

  • 2 tsp coriander

chopped veggies:

  • 1/2 onion

  • 1 leek

  • 3 cloves garlic

  • 3 carrots

  • 2 celery stalks

  • 2 parsnips

  • 1 pkg mushrooms

  • couple handfuls of green beans or 2 cups chopped frozen green beans

  • 1 zucchini

  • 1/2 can sliced olives

  • 2 cups chopped spinach

Saute the onion and leek in the olive oil. Add the carrots, celery, green beans and parsnips and cook for 5 min. Add the broth. Bring to boil and reduce to medium. Add the rest of the veggies, rice and spices. Cook for another 10 min. Serve with crackers or toasted bread. Enjoy!
